Sparkling Strawberry Cupcakes

I love this recipe, the cupcakes are so delicious and the strawberry on top gives it a rustic feel. This recipe yields 12 cupcakes.

Cupcake Ingredients
2 cups all-purpose flour (cake flour would be ideal)
1 1/2 teaspoon baking powder
1/2 teaspoon salt
1/2 cup unsalted butter, room temperature
1 cup sugar
3 eggs, room temperature
1 cup fresh strawberries, pureed
1/4 cup whole milk
1/2 tablespoon vanilla extract

Soft As A Cloud Butter Cream Frosting
12 large strawberries
1/4 cup lemon juice
4 tablespoons sugar
red/pink sprinkles

Preheat your oven to 350 degrees F.

Line the cupcake/muffin pan with cupcake liners. This recipe yields a dozen cupcakes.

In a large bowl, combine together the dry ingredients (flour, baking powder and salt) and set a side.

Using a electric mixer with bowl, cream the butter on medium high speed until lightly fluffy.

Gradually add the sugar (make sure you turn the blender off when you do this to keep the sugar from flying everywhere) and mix until the butter and sugar are well blended.

Reduce the speed to low and add one egg at a time. Wait until the egg has completely blended into the mixture before adding the next egg.

Add the vanilla extract, milk and strawberry puree in another bowl.

Alternate adding the flour and milk mixtures to mixer. Start with the liquid and end with the flour.  Don’t forget to scrape down the sides of the bowl to ensure everything has been mixed together.

Transfer the batter to the muffin tins and fill 3/4 of the way up.

Bake for 20-25 minutes, or until lightly browned. When a toothpick is inverted in the center of the cupcake, it should come out clean.

Cool cupcakes completely on a wire rack before adding the frosting.

Combine together the lemon juice and sugar and allow the sugar to dissolve in the mixture.

Slice the strawberries from the point (one end of the strawberry) to the center a few times. Dip the strawberries in the lemon juice mixture and allow it to get fully coated. Place these dipped strawberries on a plate. (You can cover the strawberries in sugar to give it a bit more glitter.)

Once the cupcakes has fully cooled, add the frosting. Top with a strawberry and sprinkles.
