This serves 24 people
10 large red bell peppers, cut into long strips
1 bottle of Newman’s Own Italian Dressing or any preferred dressing
24 large flour tortillas
2lbs Genoa Salami
2lbs Sandwich Pepperoni
2lbs slices provolone or mozzarella cheese
2lbs sun-dried tomatoes
Mild or hot pepperoncini peppers, sliced or whole de-stemmed
Marinate the strips of red bell peppers in the Italian dressing and place on an aluminum foil lined cookie sheet and bake in the oven at 300 degrees F for 10 minutes. Allow it to cool.
Assemble each wrap with a bit of each ingredient and pull the end corners in and wrap, secure it closed with two toothpicks and cut in the middle. Arrange on a large cookie sheets or a tray and keep refrigerated until you are ready to serve.
