Serves 6-8 depending on serving size
6 large potatoes (yukon gold, red, white or russet potatoes), peeled and boiled
1 package of cream cheese, softened
1 cup of sour cream
1/2 cup butter, softened
2 teaspoons salt
1 teaspoon pepper
1 teaspoon garlic powder
3 large green onions, chopped
1 package (10 ounces) frozen chopped spinach, drained
1 teaspoon salt
1/2 teaspoon pepper
1/2 teaspoon garlic powder
1/2 teaspoon onion powder
2 cups cheddar cheese, shredded
In a large bowl, whip together the potatoes, cream cheese, sour cream, butter, salt, pepper and garlic powder until smooth.
Mix together the green onions, spinach, salt, pepper, garlic powder, and onion powder.
Spoon the spinach mixture into a greased 2-qt. casserole dish and cover with the potato mixture. Cover with the cheddar cheese and bake at 375° for 20-25 minutes until the cheese is golden brown on the top. This dish can be prepared ahead of time and refrigerated, then baked just before serving. This also freezes very well.
