4 cups water
1 1/4 cup sugar, honey or stevia (feel free to use whatever type of natural sugar substitute you prefer)
1 tablespoon vanilla
zest of a lemon
1 cinnamon stick
2 whole cloves
4 firm Bosch pears, peeled (low-carbers can poach apples, peaches, nectarines)
In a large saucepan, combine together the water and sugar on low heat until the sugar has completely dissolved. Add the spices to the pot.
Add the pears to the pot and cover with parchment paper to ensure the pears stay submerged.
On low heat, allow the mixture to simmer for 15-25 minutes until the pears are translucent and cooked all the way through. if you pierce the flesh at the thickest point with a knife and the knife slides out, the pear is fully cooked.
Remove from heat and allow the pears to cool in the liquid.
Top the pear with chocolate ganache or remove the pears from the liquid and simmer the liquid until it has condensed, add 1/2 cup cream and serve with the pears. I personally prefer the chocolate ganache.
