Sausage Stuffed Jalapenos

I love this recipe because it isn’t too cheesy but has a smokey flavor and a bit of heat. Perfection in my mind!

2 pounds sweet or mild sausage
1 small onion, minced
4 cloves of garlic, minced
1 bunch of green onions, minced
8 ounces pepper jack cheese, shredded
8 ounces  chipotle or mild cheddar cheese, shredded
1 brick of cream cheese, softened to room temperature
6 slices of cooked and crumpled bacon
1/4 teaspoon cumin
1/2 teaspoon Italian seasoning
24 large jalapeno

Preheat the oven to 400 degrees F.

Cut the jalapenos in half and remove the seeds and stems.

In a large pan, add the sausage and onions and allow them to brown. Make sure you are

Add the garlic and allow to cook and cool for 5 minutes.

Combine all of the ingredients together but the jalapenos.

Stuff each jalapeno with the delicious cheese mixture.

Bake for 10-15 minutes until the top has browned.
