Not Your Mama’s Meatloaf (Low-Carb Version)

YUM! virtually no carbs but just as filling and delicious. I love pork rinds and have found myself incorporating them into recipes. When I want chips with salsa or guac, I pull out my rinds and even use them as a filler in recipes that call for bread. Not Your Mamas Meat Loaf

1 tablespoon butter
1 medium onion, diced
4 cloves garlic, minced
1/2 cup diced bell pepper (you can choose what color you want to use)
1 1/2 teaspoons salt
2 teaspoons freshly ground black pepper
2 pounds ground beef
1/2 tablespoon paprika
1/4 tablespoon ground cumin
1/2 cup Parmesan cheese
1/2 cup ground pork rinds
3 eggs, lightly beaten
1 teaspoon dry mustard powder
1 teaspoon Tabasco sauce
1 teaspoon sugar substitute
1 tablespoon low-carb soy sauce
1 teaspoon lemon juice
4 tablespoons sour cream
1 (15 ounce) can tomato sauce
Preheat oven to 350 degrees F.
Melt the butter in a skillet set to medium heat, brown the onions, add the garlic and cook until soft, add the green peppers and let it cook for 3-4 minutes until tender.
Mix the remaining ingredients together in a large bowl and incorporate the cooked vegetables.
Transfer the mixture to a large loaf pan and bake for 60-75 minutes until thoroughly cooked.
