YUM! virtually no carbs but just as filling and delicious. I love pork rinds and have found myself incorporating them into recipes. When I want chips with salsa or guac, I pull out my rinds and even use them as a filler in recipes that call for bread.

1 medium onion, diced
4 cloves garlic, minced
1/2 cup diced bell pepper (you can choose what color you want to use)
