Not Your Mama’s Meat Loaf

Not Your Mamas Meat LoafI have never liked meat loaf, it may have something to do with the fact that it has ketchup in it and smells a bit odd. My meatloaf if full of flavor and nothing like what you have ever had before. It is light, buttery and full of flavor.

1 tablespoon butter
1 medium onion, diced
4 cloves garlic, minced
1/2 cup diced bell pepper (you can choose what color you want to use)
1 1/2 teaspoons salt
2 teaspoons freshly ground black pepper
2 pounds lean ground beef
1/2 tablespoon paprika
1/4 tablespoon ground cumin
20 Ritz crackers, crushed
2 eggs, lightly beaten
2 tablespoons barbecue sauce
1 tablespoon soy sauce
2 tablespoons steak sauce 4 tablespoons sour cream
2 tablespoons Worcestershire sauce
1 (15 ounce) can tomato sauce
Preheat oven to 350 degrees F.
Melt the butter in a skillet set to medium heat, brown the onions, add the garlic and cook until soft, add the green peppers and let it cook for 3-4 minutes until tender.
Mix the remaining ingredients together in a large bowl and incorporate the cooked vegetables.
Transfer the mixture to a large loaf pan and bake for 60-75 minutes until thoroughly cooked.
