1 lemon, juiced (this should produce 4 tablespoons of juice)
1 tablespoon Dijon mustard
2 tablespoons fresh rosemary
4 cloves garlic, minced
1/4 cup peanut, grape seed or olive oil
1 teaspoon salt
2 teaspoons freshly ground black pepper
1 pound pork (feel free to choose whatever you like but stick to good quality meats such as a pork roast or pork loin), 1-inch cubes
Combine all of the ingredients together and allow it to marinate in the refrigerator for a minimum of 15 minutes but ideal would be 30-60 minutes.
Place the meat on metal skewers or wooden skewers that have been soaked in water.
Grill on each side for 5-7 minutes or until the meat is fully cooked.
