Low-Carb Thai Curry Paste

I love to make a batch of this curry paste and freeze the remainder in an ice cube tray, then I can take what I need without wasting.

Thai Curry PasteThai Basil Curry
6 shallots, chopped
3 stalks lemon grass
6 red chilies soaked in 2 tablespoons warm water
1 tablespoon coriander
1 teaspoon white pepper
8 cloves of garlic
3 tablespoons ginger, peeled and minced
3 tablespoons tomato sauce
zest of 1 lime
2 tablespoons cumin
1 tablespoon shrimp paste
1 teaspoon cinnamon


In a pan, sauté the cumin, cinnamon and coriander together for one minute until the kitchen is fragrant and all the flavors of the seasonings have been released. Then add the remaining ingredients to a blender or food processor until a paste texture is achieved.
