Stuffed Baked Apples

I love simple deserts that you can put together in a few minutes but taste like you took your time making it. This is such a simple recipe that reminds me of a apple pie.

INGREDIENTS

6 large baking apples (Jonathans and Jonagolds, Rome Beauty, Golden Delicious, Honey Crisp, Granny Smith or Gala)

Stuffed Apples1/4 cup quick cook oats (you can leave this out if you want)

1/4 cup brown sugar

1 teaspoon cinnamon

¼ teaspoon nutmeg

1/4 cup chopped pecans

1/4 cup currants or raisins

6 teaspoons of butter

1 cup apple juice or if you prefer apple cider

 

DIRECTIONS

Preheat the oven to 350 degrees,

Combine the dry ingredients together and set aside.

Core the apples but do not puncture the bottom portion, you are creating an empty cavity. I like to take a large portion of the apple out, chop it and add it to the filling. If you choose to make a larger cavity, please leave 1 inch of apple on the outer end to help maintain the shape.

Fill each apple with the mixture and top each with 1 teaspoon of butter.

Pour the apple juice around each apple in the baking dish, cover with foil and bake for 45-60 minutes.

Serve with vanilla bean ice cream or whipped cream.
