Protein Powder Brownies

My friend the fitness buff (who looks like he could take Schwarzenegger on and not break a sweat) is also a nutrition expert. Bob Bonic gave me this recipe and I have to say, they are pretty darn good. Health buffs everywhere, get your chocolate fix today!

1 cup of eggs (mostly whites)
1 cup of chocolate whey protein powder (I’ve also used a blend of Isoflex PB&C and a a chocolate whey….both are good)
½ cup of oat flour (ground oats in blender is most affordable and will do)
2 cups of canned black beans (without garlic, spices, etc…rinsed thoroughly)
6 heaping Tbsp of unsweetened cocoa powder
2 tsp of baking soda
6 Tbsp of Stevia
1 package of fat free sugar free chocolate fudge instant jello pudding
¼ cup of chocolate whey protein powder
Enough splashes of milk to make a thick, rich icing (not liquidy)
PB Filling-
2 Tbsp Creamy Peanut Butter (you choose, but I like all Natural stuff)
2 Tbsp Greek Yogurt
2 Tbsp Stevia
Water (enough to make a smooth spreadable consistency)
Bob's Protein BrowniesPreheat oven to 350 degrees
Blend beans in a blender or food processor until it has a smooth uniform consistency.
Mix with the rest of the brownie ingredients.
Grease a small to medium sized brownie/cake pan and spread half the batter evenly in the pan.
Pour the PB filling on top of the batter, then pour the remaining batter on top, to create layers.
Bake for approximately 25 minutes, or until, when you poke it in the middle with a toothpick, the toothpick comes out clean (oven temps and thus baking times may vary.)
While the brownies are cooling, mix the icing ingredients together until thick and smooth. Spread evenly on the brownies. Enjoy!

  1. Just pinned this on pinterest! I have to try this! Although I might sub out the oat flour for peanut flour. Save a few carbs! When you say splashes of milk, you think like 1/4 cup?? Thanks!
