I don’t know why people either love or hate okra. Okra has a very distinctive flavor (and yes, we all know that it can be slimy) but the health benefits associated with okra are numerous. Did you know that okra is a source of dietary fiber, Vitamin K, vitamin A, vitamin C, folates, iron, calcium, manganese and magnesium. Yes, it is a super food. Take a second look at okra and give it a chance. It may actually surprise you! Here is the recipe my mom has made forever and it is delicious! Give it a try, expand your culinary world and your taste buds will thank you! If you don’t like it, at least you can cross okra off of the list of things you have tried.
2 tablespoons oil
1lb okra, washed and cut into 1/2 inch rings
1 teaspoon salt
½ teaspoon paprika
½ teaspoon chili powder
¼ teaspoon turmeric
1 teaspoon buttermilk
In a large pan, heat the oil to medium-low and add the okra. Allow the okra to cook for 5 minutes and keep moving the okra around to ensure it does not burn.
Add the buttermilk, this will help the okra get rid of the slimy texture.
Add the remaining ingredients and allow the okra to cook for an additional 10 minutes until cooked thoroughly and tender on the inside and a bit crispy on the outside.
