There are days when even I don’t have the time, energy or desire to cook dinner but I still have to eat something. I like to throw together meals based off of staples in my kitchen. I know most homes have a packet or two of ramen noodles laying around as well as frozen and fresh vegetables. I know, ramen noodles for dinner- you feel guilty feeding this to your family. Well, no need. I add veggies and chicken to the ramen to make a complete meal that takes less than 20 minutes to make. That is one speedy dinner that is delicious. Feel free to take full credit for this one!
1 tablespoon butter
2 chicken breasts, diced
1 large onion, diced
2 packets of ramen noodles, any flavor with the seasoning packets
1 bag of frozen mixed vegetables (I like the stir fry mix or soup mix, feel free to use anything you have on hand including fresh veggies)
1 teaspoon garlic powder
1 teaspoon paprika
2 cups water
In a large saucepan, melt the butter and add the diced onion. Once translucent (2 minutes), add the chicken and allow it to brown.
Add the remaining ingredients (all except the dry noodles) and cover pan.
Allow the ingredients to cook for 5 minutes and then add the noodles and allow it cook for another 3-5 minutes until the noodles are tender.
Serve with green onions as garnish.
